Chef Ruben Iniguez Magical Salsas
Chef Ruben will take us on a journey of different sauces that can be used in many different ways. Taking classic Mexican ingredients and by doing a variety of cooking techniques he will show how you can get many different flavors, textures and options for other dishes. Rubens make Salsas sing. You will help in the preparation and we will eat cool different salsas as we prepare them. We will also learn how to make classic sopes with a filling and test all the salsas that we have made to have some wonderful flavors. Beer, wine, local spirits and jugos are included. You will be comfortably full by the end of the meal and in a very happy mood… sometimes Salsa dancing breaks out from all the happiness. $45 USD per person. A very popular class!

About the classes
The moment you arrive you will be welcomed with a snack, plus mezcal with
wedges of orange and worm salt, a glass of artisan beer and Mexican wine for
dinner. (One beer and one glass of wine included, plus all the agua fresca you
want). It is a completely hands-on class! Be ready to peel shrimp, cut and burn
chilies, use the molcajete, grind and make agua fresca. (But don ́t worry, you won’t
do the dishes.) And when we finish cooking, we ́ll sit down and enjoy our meal.

Christmas Tamales Cooking Festival

Following the rich Mexican tradition of making Tamales for Christmas we will have a hands on start to finish Tamale making workshop. A fun gathering to do what Mexican cooks have enjoyed for centuries to do – cook and chat, gossip, laugh while we make tamales. We will make traditional corn husk tamales with pork and vegetarian options. As well as sweet tamales, a Nortena Christmas traditions that reaches into Texas and Californa and Colombian style banana leaf tamales with chicken, egg and olives!! For drinking we will make a Purple corn, pineapple Chicha for cool drinks and Cafe de Olla and Colombian hot chocolate, classic holiday beverages, to keep us caffeinated to make all these Tamales! You will be taking home lots of tamales to share with family and friends or freeze to enjoy later. We will be using clay pots to make our delicious fillings and masa. Even steaming too!
Recommended you bring an apron, take home containers and lots of good stories to share. This workshop will likely go on for at least 4 hours as we cook, laugh and make a lovely communal mess making delicious tamales. Might turn into a Tamale Fiesta with Vino Caliente after we are done!
The Divine Chiles en Nogada, like the Nuns invented it!

Chili en Nogada has become one of the most famous and lovely delights of Mexican traditional cooking. There are many versions of this classic recipe, some battered, some baked, some fired, hot, cold, smothered in creama or not… but to truly experience why this dish is such a culinary masterpiece its important to go back to its roots as it was created by the Nuns of Puebla to serve as a flag of Mexican culinary culture to dignitaries of their day.
Starting from scratch we will discuss, discover and create a traditional Chili en Nogoda using the traditional and favored ingredients the Nuns would have used. You will look at Chili en Nogada in a whole new magical way.
We will also make fresh Hibiscus tea and a playful Mexican inspired cocktail to enjoy as we cook overlooking the Playa de los Muertos beach and expansive in our indoor outdoor ART kitchen 8 stories above the bay. For lunch we will eat our Chili en Nogada creations.
